The whisky, which is predominantly matured in American oak sherry casks, develops fruity and floral flavours that are wonderfully balanced by European oak. The latter gives it roasted richness and a fine astringency, while the bourbon casks add a final sweetness that mimics the dessert wine flavours of Phoenix Honey Orchid tea.
