Ginraw is created using an elaborate process in which the botanicals are distilled partly in a traditional copper pot still and partly at a low temperature in a rotary evaporator - this preserves even the finest volatile flavours. The selection of ingredients reflects both Mediterranean and exotic influences: Juniper berries, lemon peel, kaffir lime leaves, bay leaf, cardamom, coriander seeds and galangal form a precisely balanced spectrum of flavours that is particularly clear, fresh and elegant.
