Solera is a traditional method used by the Spanish to age their sherry and keep it consistent. A fraction of each young cask is blended with more mature spirit. It is the inspiration for the Solera single malt. And it means that there is still a hint of one of Starward's first casks in every bottle produced today. Apera casks from the McWilliams winery are used for maturation; Apera is an Australian fortified wine, similar to sherry.
