The Poli distillery was founded in 1898 by GioBatto Poli and is now run by the four siblings Jacopo, Geampaolo, Barbara and Andrea Poli. It is located in the north-east Italian municipality of Schiavon in the province of Veneto.

Poli is known for its unique grappas, but decided to produce its first whisky on 15 October 2013 in honour of the citizens of Veneto. This outstanding whisky is made from pure barley malt and distilled by hand using atanor. The water used to make the whisky is of exceptional purity and quality. It comes from Monte Grappa, which has been declared a UNESCO biosphere reserve. The Italian malt is matured for 5 years in oak barrels, after which it is finished for a year in Amarone barrels.

The name "Segretario di Stato" and the depiction of St Peter's Square on the whisky's label have been duly authorised by the Holy See's Secretariat of State.
