It is produced using traditional methods: The agave hearts are roasted in a stone pit earth pit, which gives the mezcal with a smoky character its typical depth. Distillation then takes place in a classic copper still, which preserves the purity and structure. The Espadín provides a balanced sweetness and gentle smokiness, while the Tobalá from the Mixteca region adds additional complexity and a fine, herb-accentuated freshness.
