Firstly, the whisky is matured for many years in classic American oak whisky casks (ex-bourbon casks), which give it soft vanilla flavours and delicate, spicy notes. This is followed by a second maturation in European Oloroso sherry casks, which give the whisky additional complexity, fruity richness and honeyed depth. This double maturation process - which gives the whisky its name "Double Wood" - gives it an exceptional balance between sweetness, spice and wood character.
