Plantation Rums have long since ceased to be an insider tip. The excellent rums are mainly collected in the Caribbean and also in South America and then brought to France, where they are given their finishing touches. In Ars in France, the rum is then stored for several months in small discarded oak cognac barrels. This type of ageing is known as "double ageing", a technique that was already used in the 18th and 19th centuries.

Plantation Rum Panama 2007 is made from molasses and fermented for three days at the Alcoholes Del Istmo Distillery.

In Panama, this rum matures for 11 years in bourbon barrels, after which it matures for a further 24 months in ex-Cognac barrels made from French oak in the cellars of Château de Bonbonnet/Cognac.

This rum is finished for 1 year in rye whiskey barrels at the New York Distilling Company.
