What makes this speciality so unique is the elaborate, manual production process: first, roasted and crushed chestnuts from Piedmont are soaked in Dellavalle's best grappa for around six months. After this maceration process, the liquid is separated and matured for around five years in 225-litre chestnut wood barrels specially made by hand for the distillery. This rare ageing process gives the grappa deep woody notes, a gentle flavour and an exceptionally velvety texture.
