This process allows the extraction of the essential oils and flavours of the olives, which give the lemonade its subtle, unmistakable olive note. A touch of seawater is added to intensify the fresh and tangy flavours of olives and lemons. Before bottling, the lemonade is chilled to 2°C and gently carbonated with subtle carbon dioxide to create a tangy finish.
