Don Papa is named after one of the few well-known heroes of the Philippine Revolution, who, before fighting for independence, worked as a simple foreman on a sugarcane plantation. The rum is distilled at the foot of Mount Kanlaon and matures for over seven years in American oak casks, whose influence plays a decisive role in shaping its smooth, sweet-flavoured profile. A selection of different casks is then carefully blended and bottled in small batches, giving the Old Edition its expressive, harmonious character.
