Unlike traditional absinthes, which are heavily dominated by aniseed, Mata Hari Bitter relies on a complex blend of wormwood, lemon balm, violet root, coriander, cinnamon and other aromatic herbs. This gives it a spicy floral note with a slightly bitter finish that emphasises its authenticity.
