Distillation takes place discontinuously using the classic water-bath method with a traditional still, resulting in a particularly fine and elegant structure. For the Poli Athanor Italiano, two brandies are blended together, having been aged for 3 and 15 years in oak casks, thus developing a balanced interplay of depth, spice and soft sweetness.
