Description
EVO Fumo is a grappa riserva with a distinctive character, combining the art of Italian distillation with an unusually smoky note. Produced from a multi-layered cuvée of various grape varieties – including Manzoni Bianco, Glera (Prosecco) and Cabernet Sauvignon – the result is a highly complex distillate with unique depth. What makes this grappa special is the innovative use of peated pomace, which has been treated prior to distillation and lends the distillate a peaty, smoky dimension otherwise only found in the world of whisky.
Ageing takes place in a selection of different cask types, including toasted oak, which further enhances the aromatic complexity. Although, under Italian law, a grappa may be designated as ‘Riserva’ after at least 18 months’ ageing, the EVO Grappa Fumo is blended using distillates aged for up to four years. The result is a balanced, powerful and profound grappa that delights with its smoky elegance and refined structure.
