It is one of the oldest and most traditional distilleries in Piedmont, which gives it a special place in Italian distillery culture.

Due to this long tradition and its historical value, Sibona holds the prestigious "Licenza di Distillazione No. 1". This rare distillery licence is only awarded by the Italian tax office to distilleries that stand out for their exceptional history and consistent quality. Sibona Grappa di Chardonnay is a fine grape marc spirit made exclusively from pure grape marc. For its production, Sibona uses fresh marc from Chardonnay grapes from the renowned Langhe and Roero area, a region known worldwide for its high-quality grapes.

After delivery, the pomace is processed immediately to preserve its freshness. Distillation takes place gently and slowly in traditional copper stills in order to preserve the full flavour of the grapes. The distillate is then allowed to rest in stainless steel containers to develop and round off harmoniously. This careful process produces a delicate grappa that impressively reflects both the elegance of the Chardonnay grapes and the distillery's tradition of craftsmanship.
