Both molasses and sugar cane honey are used in the production of Diplomatico Selección de Familia, with the mashes fermenting for one to two days using the company's own yeast strain. Depending on the type of rum to be produced, distillation takes place in column stills, batch kettles or pot stills to achieve the perfect flavour profile.

Diplomatico Selección de Familia is an exclusive blend specially developed by Diplomatico's Master Distillers. It is made from 90% sugar cane honey and is aged in carefully selected ex-bourbon and sherry casks before bottling, which gives it its distinctive character and complex flavour profile.
