The ageing process of Plantation Rum Fiji 2011 begins with seven years of ageing in bourbon barrels, which develops an expressive ester content of 47 g/hL. A subsequent four-year maturation in FERRAND barrels further balances and refines its flavours. A final year in Marsala casks gives the rum its unmistakable finish before it is bottled in 2023 with a dosage of 0 g/L to preserve its pure and unadulterated flavours.
