It is produced in small batches using traditional methods: The agaves are cooked in earth ovens, crushed with stone mills and then naturally fermented before being distilled in copper pot stills. The long maturation period - well above average - produces deep woody flavours, balanced roasted aromas and a soft structure, without losing the typical agave freshness.
