The Plantation Rum Australia Single Cask 2009 Sherry Palo Cortado Finish is an exceptional single-cask edition from the Beenleigh Artisan Distillery in Australia, which undergoes an elaborate, multi-stage maturation process. It is made from molasses, which is first fermented for twelve days with Schizosaccharomyces pombe and then for three days with Saccharomyces cerevisiae. Following pot-still distillation in 2009, the rum was initially matured for eleven years in tropical conditions in bourbon casks. It was then taken to France for continental maturation, where it was stored for a further year in Ferrand casks. The final touch is provided by a four-month finish in a Palo Cortado sherry cask, which lends the Australian rum additional oxidative, wine-like and nutty notes.


This Plantation Single Cask bottling is also remarkable for its unadulterated composition. The rum has a dosage of 0 g/l and contains no caramel colouring (E150a) whatsoever. With 277 g/hl AA of volatile compounds and 110 g/hl AA of esters, the bottling also showcases the distinctive character of the Australian pot-still distillate. Bottled at 45.3% ABV, the Plantation Australia 2009 combines its long tropical maturation in bourbon casks with Ferrand casks and the rare Palo Cortado sherry cask finish. The 0.7-litre bottle, complete with a gift box, is aimed particularly at connoisseurs of limited-edition single-cask rums and complex cask maturations.
