Zignum Mezcal Añejo represents a modern interpretation of traditional Mexican mezcal production, combining artisanal origins with a deliberately elegant style. Produced by Casa Armando Guillermo Prieto in Tlacolula de Matamoros in the state of Oaxaca, this Añejo mezcal is made from 100 per cent Espadín agave. Unlike many classic mezcals, the agave hearts at Zignum are not cooked over smoke but gently steamed. This method preserves the natural structure of the agave and ensures a particularly clear, smooth flavour profile. Bottled at 40 per cent and supplied in a gift box, this mezcal from Oaxaca is both premium and approachable.


After distillation, Zignum Mezcal Añejo is aged for 18 months in new French oak casks. This ageing process lends the matured mezcal depth, sweetness and a pronounced cask character, which may be reminiscent of a Spanish-style rum. As a general rule, unlike tequila, mezcal may be produced from various types of agave and is traditionally characterised by a strong artisanal character. Zignum combines this tradition with modern technology, thereby creating an agave spirit that emphasises elegance, structure and barrel ageing.
