The Antica Distilleria Domenico Sibona is located in the Roer area in the municipality of Piobesì d'Alba, a few kilometres from Alba.

The special thing about Grappa Sibona is that it has a special distilling licence, the No 1 of the UTF.

Nebbiolo pomace from freshly selected grapes, chosen by Sibona during the harvest, is used.

Distillation takes place entirely in-house in copper stills, while ageing takes place for a Langs period in stainless steel vats. This grappa is matured for an initial 2 years in medium-sized barrels made from classic oak and a further 6 months in port wine barrels.

Ageing in port wine barrels has been trialled by Sibona as an innovation and leads to high-quality results.
