Don Papa bears the name of one of the few known heroes of the Philippine revolution, who worked as a simple foreman on a sugar cane plantation before fighting for independence. The rum is distilled at the foot of the Mount Kanlaon volcano and matures for seven years in American oak barrels, the influence of which decisively shapes its soft, sweet flavour. A selection of different barrels is then carefully blended and bottled in small batches, giving the Old Edition its expressive, harmonious character.
