Ypióca is considered one of the outstanding representatives of Brazilian cachaça and is characterised by its production from the finest sugar cane. The distillation process is just the beginning of a careful ageing process, during which the cachaça is stored for at least two years in barrels made from freijó wood. This specific wood, which is native to Brazil, gives Ypióca its unmistakable flavour and character.

The term 'Envelhecida', which means 'matured', indicates that at least 50% of the cachaça has undergone a maturation period of at least one year in wooden containers with a maximum capacity of 700 litres. This tradition of ageing contributes significantly to the complexity and depth of the flavour profile.
