Careful distillation in small stills using the discontinuous process allows the pomace to be processed gently. This preserves the fine, floral aromas that are essential for a high-quality grappa. The grappa is then matured in stainless steel tanks before being refined in oak barrels for 12 to 18 months. This method gives it a balanced structure and a pleasant, complex flavour that is appreciated by connoisseurs.
