The Cedar Ridge Distillery was opened by Jeff Quint and his wife Laurie in 2005. In 2009, Kolin Brighton joined them to oversee the distillation process. Only local ingredients are used, such as corn grown on the farm. The composition of 25% rye, 25% maize, 5% malted barley and maturation in new oak barrels are just some of the key characteristics of this bourbon. The use of rye lends the whiskey's character many spicy flavours; the corn, on the other hand, balances these out perfectly with its sweet components.
