Poli Barrique Due Barili is crafted from a blend of Prosecco pomace and pure pomace, giving it a unique, fresh base. After distillation, this grappa is aged for two years in French barriques, imparting subtle notes of wood and vanilla. This is followed by a further two years’ ageing in PX sherry casks, which imparts additional depth and a remarkable aroma of dried fruit and sweetness to the grappa. This dual ageing in oak and sherry casks results in a complex, balanced profile that combines both soft and intense aromas.
